Thinking Chocolate is the fruition of a 36 year old dream.
As a child,I was lucky enough to go on holidays to Spain with my parents. In Barcelona, amongst the colourful backdrop of Gaudi architecture and vibrant markets, I came across wonderful Chocolaterias.
These amazing shops were more like theatres to me. Seasonal productions, with elaborate confections taking centre stage. Every purchase was beautifully dressed in spectacular costumes of paper and ribbon. The aromas and sights in these places to my young eyes were truly magical.
This cocoa inspired magic never left me and I cultivated my interest in chocolate with gusto, collecting books, visiting shops, museums, plantations, and of course...TASTING!
To expand on this interest, I undertook online study with Pam Williams of Ecole Chocolat, the first lesson focused on tempering - a process of melting and cooling chocolate. It was difficult, messy and I was completely hooked!
Further studies followed culminating in an intensive course at Slatterys of Manchester. I flew home to Edinburgh on a cloud of cocoa induced euphoria and have been making chocolates ever since!
I love good chocolate and good conversation, it really was just a matter of time before they came together! So whether it is a tasting session, practical workshop or market ask me anything about chocolate - If I don't know, I will have a lot of fun finding out for you!
All Thinking Chocolate is about is making good looking, good tasting products with delicious fresh ingredients.
Our events are never prescriptive, and whilst you may learn a thing or two about fine chocolate, the real objective is for you to enjoy the experience and have fun!
